Creamy gnocchetti with bitto pdo cheese, chicory and shrimp, with a sprinkle of balsamic vinegar
Creamy gnocchetti with Bitto PDO cheese, radicchio & shrimps with a dash of balsamic vinegar… a simple and pretty fast tasty vegetarian dish: perfect for a NYE dinner!
- 320 g gnocchetti
- ½ onion, finely sliced
- 100 g di Bitto PDO cheese, diced
- 1 chicory head, washed and cut in julienne
- Balsamic vinegar
- 100 g of shrimps, cut into pieces
- Salt and pepper
Sauté the onion in a little oil. Add the chicory and shrimps, sauté for a few minutes, adding a little pasta water as required. Season with salt and pepper. Toss in the cooked gnocchi. Take off the heat and add the cheese. Place in a serving dish and sprinkle with balsamic vinegar.
