If yes, we have just the recipe for you: we’ll show you in a few quick steps how to prepare our delicious Fiori di Bresaola della Valtellina PGI with mixed green salad & Valtellina Casera PDO cheese.


  • 4 slices of Bresaola della Valtellina PGI
  • 50 g of Valtellina Casera PDO cheese, grated
  • 250 g of mascarpone
  • 50 g of fresh cream
  • 20 g of fresh blueberries
  • Mixed salad leaves
  • 1 mango, cubed
  • Fresh ginger
  • ½ onion, finely sliced
  • Salt and pepper


In a little oil, soften the onion, grate in the ginger and add the mango cubes. Sauté for a few minutes. Add salt to taste and take off the heat. Put to one side.
Melt the cheese with the cream, without letting it boil. Once warm, remove from heat and add the mascarpone. Put the mixture into a pastry bag with a piping nozzle.
Mix the blueberries with the mixed salad leaves and season with salt and pepper.
Fold the slices of bresaola in half and then into triangles. Lift the first flap of the bresaola triangle and, by using the pastry bag, fill the ‘sack’ that has been formed with the cheese mixture. Repeat with the remaining three bresaola slices and then lay them on top of the seasoned blueberry salad. Add some loose blueberries and the mango chutney on the bresaola laden salad.
